Select"last man standing" as your victory condition before starting game; and during game after declaring war enter chat mode and type: "104" for "don't resign." Game will not end until last enemy item is destroyed! In HD, you would select the Enemies as your chat target and chat "100" to them.
ImoAoE 3's got it right with the Trade Monopoly victory condition (it's kinda like Sacred Sites in AoE 4). There are several trade posts on the map and if you own the majority, you can press a button to start a 5 minute countdown. If they implement relic victory to AoE 2 they should do that as well.
